Banana, Walnut and Chocolate Chip Cake:
- 1 cup (small) semisweet chocolate chips, chopped if large
- 1/2 cup walnuts, chopped
- 4 teaspoons ground cinnamon
- 1 3/4 cups sugar
- 1/2 cup unsalted butter
- 3 eggs
- 4 small ripe bananas
- 8oz sour cream
- 3 cups all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
Preheat oven to 350 degrees.
Lightly coat bundt pan with cooking spray or butter.
In a small bowl, combine chocolate chips, walnuts, 2 teaspoons cinnamon and 1/4 cup of sugar. Set aside.
In a large bowl, beat the butter and remaining sugar until light and fluffy. Add rest of cinnamon, flour, baking soda, baking powder, eggs, sour cream and bananas. Beat until smooth.
Sprinkle 1/3 of the chocolate-walnut sugar on the inside of the pan. Drop in half the batter and then sprinkle 1/3 more chocolate-walnut sugar. Add the remaining batter and then top with remaining sugar mixture.
Bake cake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
