So I have never made a quiche before and never really knew how super easy they are to make. I was perusing a friends website one day and found this delightful recipe and thought it sounded great. The smell that was coming from the oven while this little beauty was cooking was fabulous. So needless to say it tastes even better. If you don’t want as much spinach in it then only use half the pack of spinach (I love spinach so the whole pack was perfectly fine).
Spinach, Mushroom & Onion Quiche:
- 1 frozen pie crust
- 1 red onion, diced
- 1 packet of sliced shitake mushrooms
- 1 pack of frozen chopped spinach
- 3 cloves of garlic, crushed
- Pinch of nutmeg
- Pinch of pepper
- 3 eggs
- ¾ milk
- ½ cup of grated or shredded parmesan cheese
Pre-heat oven to 350 degrees.
Take pie crust and poke a few holes in the bottom of the pie crust with a fork. Bake for 15-20 minutes.
In a large sauté pan heat a smidge of olive oil on medium high heat, add onions and cook until they start to go clear. Add garlic and sliced mushrooms and cook for 2 more minutes. Add drained spinach and cook additional 2 minutes. Place mixture in the pie crust.
In a bowl combine the eggs and whisk until blended. While whisking, add milk, nutmeg, pepper and cheese.
Slowly pour egg mixture evenly over spinach mixture.
Bake at 350 degrees for 40-45 minutes.
